Beer fish (pijiu yu) is Yangshuo's signature dish — a whole river fish braised in local Liquan beer with tomatoes, peppers, ginger, and spices until the sauce reduces to a rich, slightly sweet and spicy glaze. The dish was invented in Yangshuo in the 1980s and is now found across Guangxi. The best versions use freshly caught Li River fish and local craft beer.
Order the whole fish — the head and tail are the most flavorful parts. The restaurants along the Yulong River serve the freshest fish. Avoid the tourist restaurants on West Street — find places used by locals.
