Zhong Dumplings (Zhong Shuijiao) are Chengdu's most distinctive dumpling style — steamed half-moon pork dumplings served cold in a sauce of sweet soy, chili oil, garlic, and sesame. The Zhong family has been making these dumplings since 1931 and the recipe has not changed. They are quite different from northern Chinese dumplings — more delicate, cold, and complex in flavor.
