Lao Mao Hotpot is one of Chongqing's most beloved traditional hot pot restaurants, located at the original 'old dock' site on the Yangtze River where dock workers ate hot pot in the 1930s. The restaurant maintains the traditional beef tallow-based broth recipe with no shortcuts — Pixian doubanjiang fermented for 3 years, Qinghua Sichuan peppercorns, and a broth that builds in complexity over the meal.
The wait can be 1-2 hours on weekends — arrive before noon for lunch. The beef tallow broth is non-negotiable at a traditional Chongqing hot pot — don't order the clear broth here. The sesame oil and garlic dipping sauce is the traditional Chongqing accompaniment.
