Mala tang is Chongqing's most social street food — you pick raw ingredients on bamboo skewers from a refrigerated display (mushrooms, tofu, meat, vegetables, offal), hand them to the cook, and watch them blanched in a communal spicy broth then dressed with your chosen sauce. The experience is participatory, communal, and deeply Chongqing. You pay by the number of skewers (¥3-5 each).
Point at what you want from the display — no language needed. The mala sauce (麻辣) is the classic choice; sesame paste (芝麻酱) is milder. Count your skewers carefully when the bill comes.
